You can dance this one alone. No partner needed to eat this single-serving hot mex-mini meal.

1 low-carb tortilla, small size

2 tablespoon of cream cheese

4 slices low sodium, thinly sliced ham, or your favorite deli meat and slice of cheese

Run the tortilla under water, shaking off excess. Place tortilla on a large paper towel. Lay flat, and cover with deli meat and cheese.

Shake on a little hot sauce or not. Roll-up tortilla tightly to hold filling. Wrap paper towel around to secure and place in microwave. Cook on high for about 35 seconds. Careful, it’s hot!
