I discovered this fab Butternut Squash "Rotini", in the fresh produce aisle of my local market under the name Mann's. It's microwavable, and perfect for a quick, healthy meal. When you're sad, be glad that you can just pop-in a nice vegetable, and be ready to eat in less than 8 minutes.
Or, preheat oven to 425 degrees.
I choose to bake it. Add noodles to a nonstick baking sheet. Spread out, and drizzle with a little olive oil, season with minced garlic and onion. Salt lightly. Cover, and bake for 20 minutes. Remove foil, and cook for another 6 minutes, or until lightly browned.
EVEN KIDS WILL LOVE IT!
