Make a Happy Meal! Yield: 2 to 4 servings

1 cooked chicken breast, thinly sliced

1 (10 3/4-ounce) can low-sodium, chicken gumbo soup

1 tablespoon chili powder

3 tablespoons ketchup

1 tablespoon garlic powder

Salt and pepper to taste

1/4 to 1/3 pound corkscrew macaroni pasta, cooked, drained

Fresh basil garnish

In a large non-stick skillet over medium-high heat, sauté chicken. Add gumbo soup and and reduce heat to low. Simmer for about 5 minutes. Add chili powder, ketchup, garlic powder, salt and pepper. Toss in pasta. Coat well, and serve hot topped with cheddar cheese.

Yields 2 to 4 servings
