NEWCUMBER'S SALAD

Yield: 4 servings


2 cups cooked red potatoes, cubed


1 cup peeled and chopped cucumber


1 cup chopped tomato, drained


1 cup chopped Italian parsley


2 cloves garlic, minced


1/4 cup olive oil


1/4 cup red wine vinegar


1 teaspoon salt


1/2 teaspoon sugar


In a medium bowl, add all the ingredients, and mix. Chill until cold, and serve this refreshing summer salad.
