PULLED ZUCCHINI



A real shortcut veggie, ready to pull and eat in less than 20 minutes!


Depending on how many zucchini you use, the ingredients below can be adjusted. If you use 1, cut recipe in half.


Preheat oven to 375 or 400


Ingredients:


2 large zucchini, washed and sliced


1 tsp. Salt


2 eggs


3/4 cup Italian bread crumbs


1/12 cup shredded cheese


Instructions:


Place in mixing bowl. Mix very well. Using a medium size oven proof pie plate, sprayed with a nonstick coating, add zucchini mix. Bake for about 15 minutes or until cheese is melted and top is very golden brown. Remove carefully. Let slightly cool, and using a spatula, placed underneath and lift onto plate. Now you’re ready to pull the zucchini apart, or cut like a pizza. Great cold or hot.
