'TIS THE [VEGGIE] SEASON

Yes, I do love my assorted frozen veggies. Fresh vegetables are the best!

Feast your eyes on this. Just look at the assortment I purchased from our local market. Vegetables are loaded with essential nutrients, and pack a lot of nutrition with minimum calories. They’re full of vitamins, minerals, and help sustain hunger while helping build a substance called phytonutrients. They’re plant compounds that provide good health benefits.

Pick your favorite, and start making a ShortCut cook healthy meal.

2 Tbs. butter

1 red peppers, diced -remove seeds

½ cup diced cabbage (optional)

1 glove minced garlic

1 Tbs. minced dried onion, optional but packed with flavor

Tomato, sliced thin

1 medium size zucchini, sliced thin

1 tsp. salt

½ cup vegetable low sodium broth

In a large non-stick fry pan, heat butter until brown. Toss in all veggies, stir well, cover, and steam for about 4 minutes, medium heat. Stir well. Seer vegetables until golden brown. (Extra protein) toss in 2 eggs, scramble till thoroughly cooked.
