2 Tbs. butter
1 red peppers, diced -remove seeds
½ cup diced cabbage (optional)
1 glove minced garlic
1 Tbs. minced dried onion, optional but packed with flavor
Tomato, sliced thin
1 medium size zucchini, sliced thin
1 tsp. salt
½ cup vegetable low sodium broth
In a large non-stick fry pan, heat butter until brown. Toss in all veggies, stir well, cover, and steam for about 4 minutes, medium heat. Stir well. Seer vegetables until golden brown. (Extra protein) toss in 2 eggs, scramble till thoroughly cooked.
