A real short-cut for making a high protein, low cal meal.
4 eggs
2 cooked zucchini (medium sized) or 1/2 cup cooked spinach drained (salt/season to taste)
1/2 cup baking mix
3/4 cup shredded cheese
Mix ingredients together and whip it good. Pour in medium non-stick skillet and cook on medium heat for 5 min on each side.
