QUICHE' THE COOK
This low-carb meal is a perfect on-the-go food.
Make ahead, eat cold or hot, and it's yummy. Try it, you'll like it!
Preheat oven to 425.
1 cup cooked lean chicken or beef
6 white mushrooms
1 cup shreeded cheese
1/2 cup cooked veggies (opt)
1/4 cup baking mix
1/3 cup veggie broth, low sodium
1/2 cup cellantro
1/4 cup green onions
1 Tbs. dry, minced onions (opt)
A flavor booster
Mix well all the above ingredients. If too dry, add more broth. Remember, the mushrooms have some moisture.
Spray with nonstick coating and add to a pie plate size dish or tin. Smooth the surface for even baking.
In 15 minutes, check to make certain it's not overcooking. It's hot, so be careful when pressing down on the top of the Quiche' and it should be firm. Nice, golden brown is perfect.
Let cool, and cut like a pie. I do hope you enjoy my personal touch to making this dish.
No added fat, sugars, salt.
