These little white capped mushrooms make a perfect quiche. Eat hot or cold, you won’t be alone. Comfort for the tummy. It’s yummy. Preheat oven to 425

13 oz. sliced mushrooms, minced, salt lightly

1/2 cup baking mix

2 medium fresh eggs

3/4 cup shredded cheese

1/2 cup vegetable broth

1/2 cup pico de Gallo

Optional, but pumps up the flavor.

Using a medium size mixing bowl, add all above ingredients. Stir well, Place in a pie shaped pan sprayed with a nonstick coating.

Even out, place in oven.

Bake for about 20 minutes Top should be hard to the touch. Be careful, because this little fungi pie, is hot.

Serves 4 or 2 Italians.
