You'll need: 1 small nonstick skillet
1 Tbs. butter
3 eggs, cracked
1 tsp water
1 low-carb flatbread
1/4 cup whipped cream cheese
1/2 cup shredded cheese
1/3 cup Pico de Gallo Italian spice (optional)
While you scramble your eggs, cover pan with eggs. Cook both sides, turning to make sure both sides are cooked. Add eggs to cover flatbread. Top with cheese, Pico de Gallo . Carefully roll up, and let it sit for a minute or two before slicing it in half.
