Serves 4
2 chicken breasts, thinly sliced
1 egg-mixed well, salt and pepper to taste
1/2 cup Asian bread crumbs
2 tbs. butter
1 tsp. Oil
Using a large nonstick skillet, add butter/oil and lightlyi brown before adding chicken. Simmer each side for about 2 minutes, until golden golden brown. Be certain the chicken is cooked through. Serve with your favorite Asian sauce, or eat it like I do, just out of the frying pan, and into my mouth. Yum.
